Carbohydrates

Carbohydrates are a necessary part of a healthy diet because they provide the body with the energy it needs for physical activity and to keep organs functioning properly.

Carbohydrates include grains, also called cereals, which come in many shapes and sizes. Whole are a good source of complex carbohydrates, fiber, vitamins, and minerals and they are naturally low in fat.

  • "Whole" refers to anatomy of the grain the bran, germ and kernel. If food is whole grain than it contains all three parts.
    • Example: Brown rice, whole wheat bread
  • Refined grains have had the bran and germ removed from the grain, although some vitamins and minerals are added back into the refined grains after the milling process, they still don’t have as many nutrients as whole grains, and they don’t provide the fiber
    • Example: white flour and white rice

Why whole grains?

Whole grains haven’t had their bran removed by milling making them a better source of fiber which can prevent constipation and can also help reduce the risk of heart disease, cancer and diabetes. Whole grains are also an important source of vitamins and minerals. If you are purchasing whole grains make sure the package and ingredient list states "whole", and has at least 3 grams of fiber per serving.
